Immerse yourself in the magic of the flat-top grill, or "griddle" as it is often known in this cooking class in Los Angeles.

You will explore simple restaurant techniques for the comal, or plancha, and afterward, you should have a newfound appreciation for your humble stovetop and a good many tricks up your chef coat sleeve.

It's easy for the family to tire of the same old cooking techniques we all know and love. When the house gets warm inside during summer, we hesitate to turn on the oven or produce heat for an extended period on the stovetop. Sure, grilling outside is great, but we don't always have the time or inclination to fire up the coals and go through all that. What's the seasonal solution? The flat-top grill!

If you don't already have one, they are inexpensive and widely available. Having one will open up your and your family's culinary world to so many new dishes that are quick and inexpensive to produce. In this class, you will work with a chef to simulate some great family fun with the flat-top, the cutting-board, the sink, and a few humble tools.

Buongiorno!

My name is Vincent. I was a professional chef for 25 years before transitioning to photography for a living.

I trained under the lineage of Jean Banchet and went to culinary school at the Cooking and Hospitality Institute of Chicago.

I've been developing my culinary identity since I was a young boy and learning from my Italian mother. My skills culminated in Tuscany when I met and learned from my family in Bagni di Lucca and expanded my Italian technique. I've cooked everywhere from pierogi factories, to Angelini Osteria, to acclaimed Chef Steve Chiappetti's bistros, and more. I was even Kat Von D's personal chef.

My style is home-spun and my knowledge is vast. I gravitate to Provençal and rustic Italian, but my techniques extend into the cooking of Germany, Spain, Greece and beyond.

I'm a patient teacher, and I'm passionate about people cooking well at home. The food from the home is, after all, the barometer for quality in Italy in France. I aim to make people feel like their hearth is where the best food is to be had...
