Looking for new recipes to bring a little excitement to your weeknight meals? In this online class, you'll learn how to make an easy, South American-themed dinner with Chef Leticia.

What you'll make:

You'll make a simple recipe for fish braised with tomatoes and onions, popular all-over South America. Chef Leticia will show you how to jazz it up by adding capers, dill, and lemon zest. This dish is very flexible and can be prepared with tilapia, red snapper, halibut, monkfish, or cod.

For dessert, you'll make a cake molten that's warm and runny in the center. You can serve with coconut ice cream or even plain vanilla for a nice contrast of temperatures and textures.

This hands-on virtual cooking class is great for all levels. Even if you're a cooking novice, you'll be able to follow along easily. This class makes an engaging team building activity or a virtual experience to gather with friends and family.

Please Note:
Students should have all ingredients pre-measured and have kitchen pots, pans, and utensils ready to go before joining your class. It also helps to have your ramekins for your dessert buttered beforehand.

  • 1 cup chicken stock (store-bought or frozen Brodo)
  • Olive oil
  • Dried oregano
  • Paprika
  • Whole nutmeg
  • 1 box chicken stock (or vegetable stock, or fish stock)
  • 1 jar capers
  • Kosher salt
  • Fresh black pepper
  • White wine
  • 1 can dulce de leche (I use Nestle brand, but any Argentinean, Uruguayan, or Colombian brand will do)
  • Sugar
  • All-purpose flour
  • Vanilla extract
  • Ground cinnamon
  • 4 teaspoons hemp seeds

Leticia graduated from the Culinary & Pastry Arts program at the International Culinary Center (former French Culinary Inst.) and worked at Le Cirque, La Caravelle, & La Grenouille in NYC.
She later studied journalism and is the author of 3 cookbooks, becoming a nationally recognized food personality in the U.S, making frequent appearances on major network programs such as The Today Show, Fox News, and CBS The Couch. She was an NBC correspondent for the 2016 Summer Olympics in Rio and worked with Merck as the spokesperson for a healthy living campaign.
